Derrumbes Oaxaca is made with agave Espadin. The agave is cooked in an underground stone pit using black oak to give a light smokiness, which complements the mineral and fruit notes of the Espadin agave from which it is crafted. The fermentation is naturally aided by the addition of pulque from the agave Americana before wild yeasts complete the 72-hour process. Derrumbes Oaxaca is twice-distilled in copper pot stills, the resulting liquid is 48% ABV. It is rested for up to three months in large glass bottles.

    Tasty espadin with a hint of tobala. Hints of butterscotch and citrus. Had a small taster of this one and wanted more. Priced well considering the nice flavors. Overall wish the tobala would stand out more considering it is 30% of the mix.

    Lote 7, 47.5% Nose: Hot, with cedar, lemon meringue, band-aid, vaguely floral (magnolia?), some mild soapiness and ash Palate: Alcoholic and a touch cloying, with sweet cooked agave, lemon-lime syrup, dandelion, wet slate. Medium-full bodied. Finish: Lime peel, cucumber, pickle, pruned hedges; some bitter ash late. Short length. A very middle of the road profile. It’s balanced but no element really shines and the alcohol isn’t as well integrated as other bottles in the Derrumbes line.…

    It’s a little sweet and ashy on the nose with hints of fruit. The wild agave and rich flavor of maguey comes through the initial taste, and the balance between the blended agave provides notes that bounce around the mouth. It’s somewhat light in texture and has some heat at the end.

    I find this a bit anonymous but there are notes of mild smoke, flowers, tar and cucumber.
