El Tinieblo Añejo is produced using traditional methods by mezcalero Don Balthazar Cruz in the state of Tamaulipas. The agaves are cooked in an earthen pit, crushed with a tahona, and the fermented in open air wooden vats. Next, the spirit is doubled-distilled in copper stills and adjusted to a final ABV of 40%. This añejo is aged for up to 2 years in American White Oak wooden barrels previously used for bourbon.
