Erstwhile Cuishe Mezcal is produced by Juan Hernández Méndez in Santiago Matatlán, Oaxaca using 100% agave Cuishe (var. Karwinskii). This mezcal was naturally fermented in open-air wooden vats and distilled in copper alembic pots. This is an herbal, approachable mezcal with floral, green, banana, and chipotle aromas. On the palate, the banana follows through with a hint of cloves, cinnamon and melon.
