Wahaka Espadin Botaniko is a limited release. It’s made by adding a bag of herbs to the copper still during the second distillation. The herbs are collected from nearby fields around San Dionisio Ocotepec. The process creates a clean mezcal with notes of juniper, cardamom, vanilla, lemon, and lavender. Like the Wahaka Manzanita, this is another vegan “pechuga” by master distiller Alberto Morales.
Had a chance to try some of this at the Wahaka planeque in San Dionisio Ocotepec. It‚Äôs like nothing else I‚Äôve ever tasted. There are strong notes of vanilla bean and lavender that give this mezcal a really sweet and delicious character. I‚Äôm a big fan of this mezcal.
